One of my favorite go-to sandwiches for lunch is a Caprese grilled cheese sandwich. Its simple, has a lot of fresh ingredients and is very flavorful.
I like to use Italian bread, which isn’t usually high in fiber but that can be made up for the rest of the day 😉
To make a Caprese grilled cheese you will need:
- 1 medium slice of Italian bread, cut in half
- 2 teaspoons of non-hydrogenated margarine
- 1 slice of reduced fat provolone cheese
- 1 oz fresh mozzarella cheese, divided into smaller pieces
- 2 tomato slices
- Fresh sliced basil to taste
I’m pretty sure you all know how to cook a grilled cheese sandwich, so I won’t bother writing directions here. Basically, this sandwich is best when the cheese is melted and the bread is crusty brown on the outside. You can serve this with the classic choice of tomato soup (low sodium please!), or you can pair it with some fresh fruit and a green salad.
